Relationship criticism?

I'm engaged to a great guy, we met in the same college and we both work and go to school. I'm going to school for Social Work, while he's going to work to be a Paralegal and get his ociate's Degree (he pays for his own cles and aspires to get his Bachelor's Degree). My whole family loves him and vice versa, but recently my mom came to me and said, "Paralegal's don't make ****! Why won't he become a lawyer! You need to realize if he's bullshiting." I was upset by this because she never said a bad thing about him at all, now, she wants to criticize his choice of profession and he would have to go into another student loan in order to accomplish an eight-year law degree. She has an ociate's Degree in Psych and she doesn't work, my dad is the breadwinner and always has been (He started working in a factory years ago and he makes over $20 an hour if not more and makes $100,000 annually,which my mom loves to tell people, but he hasn't criticized my fiance, he says he really likes my fiance). What I'm trying to understand is how stable is the Paralegal proffesion? Is my mom too harsh? Should I listen? I love this man so much and he has been nothing but good to me.
